牛山盛りうどんは、ぶっかけうどんがベースになっています。
ぶっかけうどんは、温と冷の両方が選べるのですが…
熱い夏には「冷」がおすすめです。

また、ベースとなるぶっかけうどんを釜揚げうどんに変更することも可能です。

牛山盛りうどんでは、注文後に牛肉と玉ねぎをフライパンで焼いて味付けして提供されます。
これは、牛好き釜玉と同じ手法です。
甘辛く味付けした牛肉の旨み、玉ねぎのシャキシャキ感がダイレクトに口の中に広がります。

牛山盛りうどんの割り下の味付けには、隠し味として白ワインが使用されており…
独特の風味が素晴らしいです。
また、白ワインを使用することで、肉に保水効果を持たせて牛肉を柔らかくする効果もあります。

牛山盛りうどんは、ぶっかけうどんと牛肉と玉ねぎが別皿で提供されます。
冷たいぶっかけに温かい牛肉と玉ねぎのコントラストが楽しめます。

別皿で提供されているのには理由があり…
うどんに具材をかけてもよし、また白ご飯にかけて牛丼としても食べても良いのです。

そういえば…白ワインは吉野家の牛丼を再現する場合の隠し味にも使用されてますね。
なので、この牛肉と玉ねぎは牛丼としても素晴らしいお味！

牛肉と玉ねぎの具材は180ｇ以上ということでかなりのボリュームです。
山盛り…そのように名付けられているのも納得！

甘辛く味付けされた牛肉は白ワインの効果なのか？非常に柔らかく…
風味が抜群！

また、玉ねぎのシャキシャキとした食感もええ感じです。
玉ねぎには、辛味が一切なくて…甘味が非常に引き立っています。

今回の牛山盛りうどんは…ぶっかけベースだけでなく、釜揚げうどんをベースにすることが可能です。
この日もとても暑かったのですが…どうしても別バージョンの牛山盛りうどんを食べたくて注文しました。

もちろん、通常の牛山盛りうどんと同じ値段です。

釜揚げバージョンは茹で上げた温かいうどんを、あったかいツユにつけてたべます。
そのツユに牛山盛りの肉と玉ねぎ…
旨みの効いた割り下を混ぜていただくことになります。

トッピングには温泉玉子を選択、牛山盛りうどんとは相性抜群です。
牛丼に玉子を追加注文するように…
牛肉に玉子の黄身が絡まり絶妙な味わいになるのです。

相変わらず牛山盛りうどんの具材はたっぷり…
割り下がこぼれてしまうほどです。

山盛りのインパクトを出すために仕方がないと思いますが…
可能であれば、汁がこぼれないような器で提供してほしかった…

牛山盛りうどんの、ぶっかけバージョンと釜揚げバージョンの両方を食べてみましたが…
