2018年1月30日～3月下旬まで販売を予定している「鴨ねぎうどん」を早速食べてきました。
柔らかい鴨肉とネギの相性が抜群のうどん！

鴨ねぎうどんはどんなメニュー

「鴨ねぎうどん」はたっぷりの鴨肉に、フライパンで焼いたネギが入った、なんとも贅沢なうどんです。
鴨肉って硬いイメージがあったのですが、丸亀製麺の鴨肉はとても柔らかい！
鴨肉の火の入れ加減が絶妙なんでしょうか？

丸亀製麺のHPには、独自の製法で…と記載されていますが…
これは、おそらく鴨肉をあらかじめ低温調理をしているに違いありませんね。
低温で調理することで、肉のたんぱく質が凝固しないため、非常に柔らかく仕上げることができるのです。

また、鴨肉の独特のにおいは、ねぎと三つ葉、柚子の皮の爽やかな香りで完全に相殺されています。
