丸亀製麺の鴨ねぎうどんとは？

2017年1月11日〜2017年3月上旬まで発売予定の
季節限定うどんになります。
とても柔らかい鴨肉と、焦がして香ばしくなった長ネギを使用した贅沢なメニューです。

鴨肉って高級食材なのですが、価格はしっかりと低価格に抑えてくれています。
私は滅多に鴨肉を食べないので…鴨肉は硬いという先入観がありましたが、丸亀製麺の鴨肉はとても柔らかく…
旨みに溢れるものでした。

丸亀製麺では独自の製法でやわらかく食べやすいように調理をしているとのことです。
鴨肉は火加減ひとつでこんなにも味わいに違いがでるということを認識できます。
また、鴨肉は独特の臭みがあるものですが…
長ねぎや、柚子、三つ葉という香りの強い野菜を一緒に入れることで、臭みを感じることなく頂けることができました。
