大阪難波のうどん屋さん!おいしいかすうどんは新メニューです。
“かすうどん”をご存知ですか？
かすうどんの”かす”は、牛の小腸をじっくりと脂が抜けるまで高温の脂で時間をかけてあげたものです。
うどんに”かす”を入れた”かすうどん”は大阪河内地方では、昔から愛されている伝統的な郷土料理とのことです。
私は、大阪に住んでいながら、かすうどんを食べたことがありませんでした。
“かす”は牛一頭（600～800kg）から2kg程度しか取れないため、貴重な高級食材です。
“JUN大谷製麺処”は、よく通っているうどん屋さんで、いつもは”ぶっかけうどん”を注文することが多いのですが
今日は壁をみると、「かすうどんあります」の張り紙がありました。
新メニューなのかなと思い。
注文してみたところ、ホールのおばちゃんは「試してみます？」と言われました。
ｴｪｴｪｴｪｴ(ﾟДﾟﾉ)ﾉｴｪｴｪｴｪ
なんで、疑問文なのかと思ったのですが、
こちらの”かすうどん”先週から始めたばかりの”新メニュー”とのことです。
「”かすうどん”を注文するお客さんは少ないのかな….」
と思ったのですが、後日、こちらのお店のfacebookを確認すると
“かすうどん”は完売することがある、人気のメニューのようでした。

かすうどんのお味は？
“かすうどん”が出てきました。
“薄揚げ”と”かす”、”ねぎ”がのってます。
こちらのお店であったかいうどんを食べるのは初めてです。
出汁が飲みやすいように、レンゲが付いています。
この心つかいがうれしいです。
“かす”をはじめて食べました。
さくさくしているものと予想しておりましたが、そうではなく、歯ざわりは通常のもつ煮込みに近く、揚げものの香ばしさの風味を感じれるものでした。
うどんの出汁に”かす”の旨みが出ており
ぐっジョブです。
また、薄揚げは、うどんの出汁がしみこみ、おいしくいただけます。
あたたかいうどんは、しみじみおいしいです。
冬でも、ぶっかけうどんを食べていたのですが、今年は、寒くなってきたら暖かいうどんメニューにも挑戦してみようと思います。
あたたかいおうどんは、いつものぶっかけうどんとは、歯ざわりが異なるのに驚きました。
ぶっかけうどんのときは、しっかりとしたうどんのコシが感じられるのですが、あたたかいうどんの場合は、麺にコシを感じられながらも、麺にふんわりとした食感も含まれます。

こちらのお店は、あたたかいうどんも絶品です。
